This recipe for eggnog comes via Dan Murphy’s and is perfect to make with our Happy Hundred pasture-raised eggs.

Depending on the size of your crew, you’ll need lots of them!

Here’s the lowdown:

Total time 25 MINS | serves 5 | standard drinks per serve 1.1 approx.

Ingredients

700mL full cream milk
240mL thickened cream
1 tablespoon vanilla essence
3 cinnamon sticks
1 teaspoon grated nutmeg, plus more for garnish
5 eggs, with yolks and whites in separate bowls
130g white sugar
175mL rum

Method

Add milk, cream, vanilla essence, cinnamon and nutmeg into a saucepan
Gently simmer, being careful not to boil, then allow to rest and cool
In a separate bowl, add five egg yolks (don’t discard whites) to the sugar and beat together. Slowly stir in the milk mixture
Add the rum to this mixture and slowly stir to combine
Add the egg whites to a new bowl and beat until fluffy
Gently fold the whites into the mixture
Refrigerate, then serve in glasses when needed
Garnish with a sprinkle of nutmeg
